Karakteristik Organoleptik Biskuit Substitusi Tepung Uwi Ungu (Dioscorea alata) dan Isolat Protein Kedelai

Abstrak. Salah satu jenis makanan yang sangat disukai oleh masyarakat Indonesia dari anak kecil hingga orang dewasa yaitu biskuit. Biskuit merupakan produk kering terbuat bahan dasar tepung terigu dengan substitusinya, minyak atau lemak dan tanpa penambahan pangan lain. Peningkatan permintaan disebabkan karena banyaknya olahan menggunakan terigu. Pengurangan pengunaan sebagai baku utama dalam pembuatan biskuit dapat dilakukan memanfaatkan salah lokal uwi. Penggunaan uwi ungu menghasilkan kandungan protein rendah sehingga perlu ditambahkan isolat kedelai untuk meningkatkan dihasilkan. Tujuan penelitian ini adalah mengetahui pengaruh substitusi terhadap karakteristik organoleptik terbaik Penelitian metode Rancangan Acak Kelompok (RAK) faktorial 2 (dua) faktor (W) konsentrasi (P).
